Simple Copycat Romany Creams

Ingredients

300g butter (bit more than a cup)

1 cup sugar

1 egg

1/4 cup oil

3 1/2 cups flour

1 teaspoon baking powder

1 table spoon vanilla

1 cup cocoa powder

2 cups desiccated coconut

Method

Mix the wet ingredients together until creamy.  Then add the dry ingredients and mix.

Let dough rest 10 minutes.

roll into oblongs / ovals I suppose and smash with a fork to look like 1 half of a romany cream.

Bake for about 12 minutes at 180 degrees C.

Melt some chocolate and spread it on one side of a biscuit.  Leave for a minute of 2 and then sandwich together with another one.

Allow to cool if you can and then enjoy.
